榛果費南雪 Hazelnut Financier

費南雪是一款用了大量果仁粉、蛋白和焦化奶油的常溫蛋糕,口感札實同時外脆內軟,擁有濃烈的榛果香味。

(((焦化奶油是奶油加熱至金黃色,帶有類似焦糖和榛果味道 )))

榛果費南雪 Hazelnut Financier 的烘烤時間較為短,為了增強當中的榛果味道,將榛果粉榛果粒事先烘烤好才加入費南雪蛋糕糊內。這款榛果費南雪最好出爐後當天食用。

Financier is a french cake made with ground almonds(or any nut flour), egg whites and beurre noisette which is a brown butter cooked until golden.

The baking time of Hazelnut Financier is short. In order to enhance toasted hazelnut flavors, the GROUND and WHOLE hazelnut are toasted in oven before adding into cake batter.

中筋麵粉 All-Purpose Flour70g

無鹽奶油 Unsalted Butter150g
100%榛果醬 100% Hazelnut Paste
榛果粒 Whole Hazelnuts

之前的準備 PREPARATION

– 蛋白放置於室溫 Bring egg whites to the room temperature
– 將蛋糕模具均勻噴油或塗刷奶油溶液(份量外) Grease the cake pans with baking spray or melted butter


步驟 STEPS

1. 預熱烤箱至160°C,將榛果粉倒在烤盤內。烘烤約20-30分鐘或部份變成金黃色。Pre-heat oven to 160°C, spinkle GROUND hazelnut in a thin layer on baking tray and bake about 20-30mins.

3. 準備焦化奶油: 將奶油加至鍋中,一邊攪拌一邊加熱,直至奶油變成焦糖色。離火,倒入料理碗內並用冷水降溫。To prepare beurre noisette: Place butter in the saucepan ,heat it gently and whisk as it melts. Keep heating until it changes to golden brown colour. Turn off the heat, transfer brown butter(beurre noisette) to mixing bowl and cool on ice water bath.

4.混合步驟 1 的榛果粉、糖粉和中筋麵粉至碗內。Combine ground hazelnut, icing sugar and all-purpose flour in a mixing bowl.

5. 加入蛋白並攪拌均勻。Add Egg whites into flour mixture and stir well.

6. 加入已冷卻的焦化奶油並攪拌均勻。Add brown butter(beurre noisette) into flour mixture and stir well.

7. 放入冰箱冷藏1小時。Place the bowl in the fridge and leave to rest for 1hr.

8. 將費南雪蛋糕糊擠入9.5cm x 5cm的長方烤模中,約6成滿。在表面擠上100%榛果醬和放上步驟2榛果粒。Fill 9.5cm x 5cm cake pans with Financier batter, 2/3 full. Pipe and place the 100% hazelnut paste and hazelnut halves on top.

8. 將費南雪蛋糕糊擠入9.5cm x 5cm的長方烤模中,約6成滿。在表面擠上100%榛果醬和放上步驟2 的榛果粒。Fill 9.5cm x 5cm cake pans with Financier batter, 2/3 full. Pipe and place the 100% hazelnut paste and hazelnut halves on top.

9. 放入180°C烤箱焗20分鐘,出爐後放涼,脫模。Bake at 180°C oven for 20mins. Transfer on wire rack to cool completely.Then, demold them.
