美式肉桂卷的螺旋外形十分獨特,肉桂奶油餡料烤好後,濃厚辛香料漸漸散發出來,而這款司康以肉桂卷為設計樣本,模仿成相似的外形,以及散發黑糖肉桂的香味。

肉桂司康用泡打粉而非酵母來讓麵團膨脹,與真正的美式肉桂卷比起,不需要進行發酵,因此製備時間較短,烤焗時間亦較短。

肉桂粉(條)的味道強烈,而且偏向带點辛辣風味,因此與黑糖十分配搭,甜中帶辣,讓味道沒那麼單調,不會只有甜膩。而選用黑糖的色澤愈深,代表的焦糖味道愈濃郁。而這份食譜用的是接近咖啡色的黑糖,主要原因是為了讓烤好司康的螺旋部分較為顯眼。

事先烤好的核桃切成粗粒,加進黑糖像肉桂餡內,讓整個司康帶有脆口口感和乾烤果仁風味。除了核桃外,其他種類的果仁例如杏仁和榛子都十分適合。

優格司康 Yoghurt Scone
- 200 g 低筋麵粉 Cake Flour
- 1&½ 茶匙teaspoon 泡打粉 Baking Powder
- 30 g 砂糖 Caster Sugar
- 少量 a pinch of 海鹽 Sea Salt
- 40 g 無鹽奶油 Unsalted Butter 冷藏 Cold
- 1 隻 pc 全蛋 Whole Egg 室溫 Room Temperature
- 50 g 優格 yoghurt 原味 Plain
黑糖肉桂餡 Cinnamon filling
- 50 g 黑糖 Brown Sugar
- 2 茶匙 Teaspoon 肉桂粉 Cinnamon Powder
- 50 g 無鹽核桃 Unsalted Walnuts
Instructions
黑糖肉桂餡 Cinnamon filling
- 核桃放入已經預熱至180°c的烤箱中烘烤約10分鐘後取出放涼。Preheat oven to 180°C, bake unsalted walnuts around 10mins. Cool down after baking.
- 然後將核桃切成粗粒。並放進料理碗中。Coarsely chop the walnuts. Pour into a mixing bowl.
- 加入肉桂粉和黑糖,混合攪拌備用。Add in brown sugar and ground cinnamon. Stir until incorporated.
優格司康 Yoghurt Scone
- 用塑膠刮板切拌混合低筋麵粉、砂糖、鹽和泡打粉。Use plastic dough scraper to mix the flour, salt, sugar and baking powder.
- 加入冷藏的無鹽奶油,用手捏成淡黃色的顆粒。Rub COLD butter into flour until it resembles bread crumbs.
- 混合全蛋和優格,加進麵粉奶油粒中。Combine eggs and yoghurt. Add into flour mixture.
- 輕輕混拌成麵團。Combine to form a dough.
- 擀開麵團至25cm*25cm的正方形,約1cm高。Roll out the dough to a 25cm*25cm square, about 1cm height.
- 倒入黑糖肉桂餡,掃平表面並在四邊預留2cm的間隙。Pour and spread the Cinnamon Filling on top. Leave a 2cm gap along the edge.
- 從接近自己的那一邊開始,向前捲成圓柱狀。Working from the edge closest to you, roll up the dough, making sure to tighten the roll as you go. Continue rolling the dough into a tight cylinder.
- 用保鮮膜包裹圓柱麵團。Cover the whole log with plastic wrap.
- 扭緊保鮮膜的兩端,冰箱冷藏約1小時或麵團變硬。 Roll tightly, twisting the ends of the plastic firmly to seal. Refrigerate it until firm enough to slice, about an hour.
- 取出麵團後除去保鮮膜,然後切成8等份,每個約2.5cm厚。最後放在鋪放烘焙紙的烤盤上。Remove the plastic wrap and Cut into 8 slices, about 2.5cm thick. Place on baking tray lined with parchment sheet.
- 放進180°C烤箱烘烤15-20分鐘。Bake at 180°C oven ,about 15-20mins.
